Grilled Cheese with Bacon and Caramelized Onions

Who doesn’t love a good grilled cheese? This is definitely comfort food at it’s cheesiest. There’s buttery, crispy bread smothered on the inside with three melty, tasty cheeses; Gruyere, swiss and cheddar with smoky bacon and caramelized onions.

This one does take a little more prep work than your average grilled cheese, but it’s so easy and very worth it. Once you’ve tasted this, you’ll never want to go back to your regular standard one again. This pairs wonderfully with creamy tomato soup for those brisk winter days, or with a crisp salad for those warmer days. No matter the season or the reason, this will become your go to grilled cheese.

Here’s How To Make Your Own:

You’ll need

*2 slices of sturdy sliced bread per sandwich; I used Italian

*Butter

*sliced or shredded Gruyere cheese

*sliced or shredded swiss cheese

*sliced or shredded cheddar cheese

*2 strips of bacon per sandwich

*caramelized onions

For The Caramelized Onions:

*2 large onions, chopped: I prefer yellow onions, but it’s your preference

*1/2 TBS olive oil

*1 TBS butter

*salt to taste

*1 tsp red wine vinegar

Heat a medium size sauce pot to medium and add the olive oil and butter for the caramelized onions.

Toss in the chopped onions and a pinch of salt; stir to coat the onions.

Turn the heat down to medium low. Cook until the onions turn translucent and soft, about 20 minutes stirring occasionally; stir in the red wine vinegar. Add more salt if needed.

Continue to cook for about 5 to 10 minutes minutes or until the onions turn a deep golden brown.

Remove from the heat and set aside.

While the onions are caramelizing, cook the bacon. When I’m cooking a lot of bacon, I prefer to cook them in the oven or in the air fryer (Air Fryer Bacon).

To cook in the oven, preheat oven to 400°. Spray a cooling rack with no stick spray and place in on a baking sheet that has been lined with foil (easier clean up). Place the bacon on the rack and bake for about 20 minutes or until the bacon is done to your liking. Remove the bacon and set aside.

Heat a griddle or a large pan on medium heat. Melt butter on the griddle.

Place one slice of bread per sandwich on the butter making sure all of the underside of the bread is coated in the butter.

Add desired amount of the three kinds of cheeses onto the bread. Spoon a desired amount of the caramelized onions on top of the cheese.

Place 2 slices of bacon over the onions.

Top with the other slice of bread. Continue to cook until the bread is golden brown and the cheese is starting to melt. If the bread is browning too fast, turn the heat down.

With a spatula take the sandwich off of the griddle and add more butter. Gently flip the sandwich over and continue cooking on the other side.

I know this seems like a lot of butter, but trust me, it’s worth it. This is comfort food aka splurge food. You’ll thank me after that first luscious bite.

Cook until all of the cheese is melted and remove from the griddle.

Slice and Serve.

Air Fryer Breakfast Sausage

Cooking breakfast sausage in the air fryer couldn’t be easier. You don’t have to worry about the grease splattering everywhere and it’s faster than cooking them in the oven. In 15 minutes or less you can have crispy, juicy sausages to enjoy with breakfast or even with a breakfast for dinner meal.

What I love even more is I put the sausages in, when I’m almost finished making the pancakes, eggs or whatever the breakfast choice maybe, I just start the air fryer. By the time everything else is done, the sausage is ready as well. It’s that easy. You can use raw, frozen or even precooked sausage.

So make your mornings easier and see how you can cook your own breakfast sausages in the air fryer.

Preheat to 370°F

Carefully place the sausage links in the basket in a single layer.

Cook for 9 to 10 minutes or until they are no longer pink and the internal temperature reaches 160.

If the sausage are pre cooked it will take less time because they will only need to be heated thru.

To Cook From Frozen add about 2 minutes more to the cooking time. Just make sure the internal temperature is 160.

*Note*

Cooking times may vary depending on the size and the brand

Carefully remove and serve.

To Reheat:

Preheat to 350°F. Place the sausages in a single layer in the basket and cook for 3 to 5 minutes or until heated thru.

Air Fryer Brats

These Air Fryer Brats are crispy golden brown on the outside and juicy and flavorful on the inside. What’s even better is that they are done in 15 minutes or less.

This has become my favorite way to cooking brats. They’re faster than cooking them in the oven (and you wont heat up your kitchen in the hottest part of summer) and you don’t have to stand over a grill to get the same delicious taste. Serve them in your favorite soft bun to make one amazing bratwurst dog or have them with a mound of pillowy soft scrambled eggs. Any way you choose to eat these tasty sausages, cooking them in the air fryer will become your favorite way to make them.

Here’s How To Cook Brats In The Air Fryer:

Preheat air fryer to 370°

Place the brats in the basket in a single layer.

You can line the bottom of the air fryer basket with parchment paper or air fryer basket liners for easier cleanup. I’ve never felt the need, but it is an option.

Cook for 10 minutes turning them halfway through until golden brown on the outside and has an internal temp of 160°.

If needed, cook in several batches if all of the brats will not fit.

*Note*

Cooking times may vary depending on the size and the brand

Carefully remove with tongs and serve as desired.

To Reheat Leftovers: Preheat air fryer to 350°F. Cook for 3 to 5 minutes.

Cheesy Hamburger Pasta Casserole

This Cheesy Hamburger Pasta Casserole is easy to put together and oh, so flavorful. This will defiantly check all of those comfort food boxes. It has lucious cream cheese and Monterrey Jack Cheese blended together with savory ground beef, your favorite marinara sauce and penne pasta. It’s topped with more cheese and baked until all of those delicious flavors mix and mingle and the cheese melts to become a creamy flavor bomb.

Yes, the weather is turning warmer, but this hearty comfort food will not only feed your family after a long day, but it will also feel good to know that you can sit and share a delicious meal with the ones you love. So grab your favorite jars of marinara sauce and see how you can make your own sinfully tasty Cheesy Hamburger Pasta Casserole.

Here’s What You Need:

*1 lb penne pasta

*1lb ground beef

*1 medium onion, chopped

*2 cloves of garlic, minced

*olive oil

*1 tsp. dried Thyme or more to taste

*1 tsp. Oregano or more to taste

*1 tsp. garlic powder or more to taste

*1 tsp. chili powder or more to taste

*salt to taste

*2 tsp. Worcestershire sauce

*2 jars marinara sauce

*8oz. cream cheese, softened

* 1/2 cups shredded Monterrey Jack cheese +1 cup.

Preheat oven to 375°F.

Cook pasta according to package directions but until a few minutes under done.

While the pasta is boiling, in a large skillet add a small amount of olive oil and heat to medium high heat; add in the onions and garlic. Sauté until onions are soft.

Add in the ground beef. Brown and break up the beef as it cooks making sure to stir the onions and garlic until they are well incorporated; drain if needed. Add in all of the seasonings including the Worcestershire sauce; continue cooking and stir frequently for about 1 minute.

Stir in the marinara sauce.

Tear the cream cheese into pieces and add into the sauce with the 1/2 cup of shredded cheese.

Stir until the cheeses are melted.

Drain the pasta and place back into the pot. Gently stir in the marinara beef sauce just until mixed.

Spray a large casserole dish with no stick spray and pour in the pasta mixture. Top with remaining shredded cheese.

Spray the underside of some foil and cover. Bake for 40 minutes. Uncover and bake for 10 more minutes. Serve with some crusty bread and a side salad.
