Open Faced Cheesy Pepperoni English Muffins Topped with A Fried Egg and Marinara Sauce


This is another one of my hubby’s creations. It turned out really good, but to be honest, we really didn’t
know what to call this one. It’s not really a pizza…ok maybe a reverse pizza? This is a really simple and quick lunch or dinner.. or even breakfast if you desire. It’s layered with cheese, pepperoni, a fried egg then topped with marinara sauce. This one does require a knife and fork, but it’s worth it when you first cut into the gorgeous egg and the yolk spills all of that tasty goodness onto the muffin. Heaven.

Here’s what you need to make your own:

*English muffins

*shredded cheese; I used a cheddar and Colby Jack blend

*pepperoni

*eggs, one per each half muffin

*2 tsp. canola oil

*salt and pepper to taste

*marinara sauce; jarred or homemade

Preheat oven to 400°

In a small sauce pan, heat up the marinara sauce.

Separate the muffins and place on a baking sheet.

Sprinkle the cheese over the English muffins.

Layer the pepperoni over the cheese.

Place in the oven and bake until the cheese is melted and the muffins are lightly toasted around the edges; about 3 to 5 minutes.

While the English muffins are in the oven heat a non stick pan on medium high heat and add the oil. When the pan is hot, crack the eggs into the pan.

Cook until the whites are set but the yolks are still runny; season with salt and pepper.

Take the English muffins off of the baking sheet and place on serving plates. Carefully place an egg onto each half muffin over the pepperoni.

Top with the marinara sauce.

Air Fryer English Muffin Pepperoni Pizzas

English muffins can be used for so much more than just spreading on some butter or your favorite jam. Don’t get me wrong that is really yummy, but what if you are craving pizza, but you don’t really feel like making any from scratch or breaking out the frozen kind. These can satisfy that craving. English muffin pizzas are great for a snack or a meal. Spread on a little pizza sauce and top it with your favorite pizza toppings and your taste buds will be happy. What’s even better is that these are cooked in the air fryer which means you can have your mini little pizzas even faster than if they were cooked in the oven.

Here’s what you need:

*English Muffins

* Pizza sauce, homemade or jared

*shredded cheese; I used a blend of mozzarella and cheddar

*Pepperoni or any other pizza topping

Preheat the air fryer at 400°

Split apart each muffin and spread some pizza sauce on each half.

Sprinkle on the cheese and top with the pepperoni.

Place inside of the air fryer basket and cook for 2 minutes. Open the basket and make sure that none of the pepperoni have blown off due to the fan. If they have, just carefully….the basket will be hot….place the pepperoni back onto the pizzas. Continue to cook another 1 to 2 minutes or until the cheese is melted and the English muffins are toasted.

*Note* Cooking time might vary depending on the brand and size of the air fryer.

Very carefully remove the pizzas and serve.

Pepperoni Calzones

Calzones are right up there on my list of favorites with pizza. They are basically a pizza after all, just all of those good pizza toppings are stuffed in a crust. To tell the truth, I hardly ever make them at home. It does take a little more time than making a pizza, but they are not difficult to make. I like to keep it simple and use premade pizza dough. You can certainly make your own dough.

This calzone is bursting with pepperoni, cheese and a tasty pizza sauce all nestled in a golden brown crust. I also saved some of that pizza sauce for dipping.

Here’s what you need.

*Pizza dough: I used a premade kind.

*Pepperoni slices

*Pizza sauce; you can use homemade or premade; make sure to save some for dipping

*Shredded cheese: I used a blend of mozzarella, Colby Jack and Cheddar

*Olive oil for brushing the tops

*Grated parmesan cheese for on top of the calzone

Preheat oven to 425°.

Spray a baking sheet with no stick spray or use parchment paper; set aside.

Divide dough into equal portions and roll out into about 8 inch circles.

Spoon a small amount of pizza sauce near the center of the dough. Do not spread the sauce to the edges, because you will have to seal the dough later.

Sprinkle on the shredded cheese over the sauce.

Place the sliced pepperoni over the cheese.

Gently fold the dough over the top of the filling to create a semi-circle.

Crimp the edges using a fork to seal the dough.

Cut a few small slits into the top of the dough with a knife.

This will help some of the steam to escape with the calzones are cooking. Place on the baking sheet.

Brush the tops with a little of the olive oil.

Bake for 15 minutes or until the calzone are golden brown.

Take out of the oven and sprinkle some of the parmesan cheese on top.

Serve with some of the pizza sauce on the side.

Air Fryer Pizza Dogs

A while back ( almost a year ago to be exact) I made some rather tasty pizza hot dogs. I wanted to tweak it a bit and instead of cooking them in the oven, use the air fryer because, well, I really love this handy appliance. I’m still learning my way around it, yes still even after all these months. These pizza dogs were definitely a winner. If you like pepperoni pizza and hot dogs, then you will surely find this a keeper. The hot dogs have been cooked in the air fryer for that grilled taste, then smothered in pizza sauce with Italian seasonings, layered with pepperoni and cheese… all nestled in a lightly toasted hoagie roll. It was really hard to eat just one. Another plus is this can be done in less than 30 minutes.

Here’s what you need:

*hot dogs; I used the all beef kind

*hoagie rolls; I found that regular hot dog buns were too small but you can use what you prefer

*sliced pepperoni

*pizza sauce

*Italian seasoning

*shredded cheese; I used a pizza blend

Preheat the air fryer at 400°

Place the desired amount of hot dogs into the air fryer. Follow the link to air fryer hot dogs for the amount of cooking time. When the hot dogs are done, wipe out the basket and set aside the hot dogs, take care because the basket will be hot.

Open up a hoagie roll and spoon some of the pizza sauce on the inside of the roll.

Place some of the pepperoni in a layer down the middle.

Then lay a hot dog on top of the pepperoni.

Next, spoon more pizza sauce over the hot dog, then sprinkle on a small amount of the Italian seasoning.

Top with desired amount of cheese.

and finally, add another layer of pepperoni on top of the cheese.

Place the hot dogs into the air fryer basket.

Mine would fit 3 at a time. Depending on the size of the basket, you might have to make these in batches if you are making more than the basket can hold.

Cook at 400° for 2 minutes then check the hot dogs to see how fast they are toasting. Also, I did have a few pepperoni that blew off a little from the cheese, but it was easy to place them back on. Once the cheese starts melting I did not have any more issues.

Continue cooking for another 2 minutes or until the cheese is melted and the rolls are toasted as desired.

Carefully take out the pizza dogs and serve.

Cast Iron Pepperoni Pizza

I love cooking in my cast iron pan. It makes a great sear on steaks and helps give fried chicken that wonderful crispy crust. I have seen a few blogs with pizza cooked in one, so I thought I’d try it and see if it was truly worth it. I was really pleased with the results. The crust did indeed get crispy and it was much easier than I thought it would be. I kept it simple and just did a pepperoni topping, but next time I might go wild and add more. So use your imagination and add whatever else you might like on yours.

Here’s what you need.

*1 TBS olive oil

*pizza dough; I used a store bought that was already prepared in the dough form.

*pizza sauce

*pepperoni

*shredded cheese; I used a pizza blend.

Preheat oven to 475°

Prepare the dough.

Heat a large cast iron pan on medium high heat for about 5 minutes.Take the pan off of the heat. Pour the olive oil into the pan, with a paper towel, spread the oil all over the bottom and sides of the pan.

Place the dough into the pan.

very carefully spread the dough out using your fingers until it touches all sides of the pan.

Remember the pan is hot. I was really prepared to burn my fingers at least once, but I can gladly say I did not.

Next, spread on the pizza sauce.

Add as little or as much as you want.

Now layer on the cheese.

Then add the pepperoni or any other toppings you might like.

Bake for about 12 minutes. Take the pan out and gently lift up the crust to see if it is to your liking.

Cut into slices and serve.

English Muffin Pepperoni Pizzas

These are great when you are trying to use up those last few English muffins in the pack. My hubby actually came up with this a while back. These are pepperoni, but some times I just use cheese. You can add any topping you like, the possibilities are endless.

I have to confess that I almost deleted this post because the picture didn’t turn out quite the way I wanted, not to mention these do not look all gooey with cheese. I like these pretty crispy, but it still is very cheesy. These are really quite tasty. You can add as much cheese as you desire. I thought these were just too good not to share.

Here’s what you need:

*English muffins

*pizza sauce

*shredded cheese; I used a combination of cheddar and mozzarella

*sliced pepperoni

Preheat oven to 425°.

Lay English muffins halves cut side up on a baking sheet.

Spread desired amount of pizza sauce on to each muffin.

I found this pizza sauce by Pomi.

I have used their tomato products that come in cartons, but this was the first time I had seen this. It’s so good. It’s a little chunkier than a traditional pizza sauce.

It’s mildly seasoned so it’s not over powering. It works really well with these kind of pizzas.

Next add desired amount of cheese on top of the sauce.

Then add the pepperoni.

Bake about 8 minutes or until edges are crispy and cheese is melted. I like mine really crispy so I sometimes leave mine in a few minutes more.

Remove from oven and serve.

French Bread Pepperoni Pizza

I’ve always loved a good pizza. If hubby and I do get a pizza, it’s either from a pizza place or the frozen kind. There are some pretty decent frozen brands out there….. and some pretty bad ones as well. I have tried making my own with homemade pizza dough, but it hasn’t been a home run. I think I need to work on that a little more ( might be a future post in the works). But I can make French bread pizza. So when hubby and I had a craving for the homemade variety, I found some nice bread at the grocery store. Thank goodness bread seems to be making a come back. I had some leftover pepperoni and pizza sauce in the freezer so that made it even better.

I admit, this loaf looks like it had been on steroids, but the pizza turned out really good; nice and crispy on the outside and around the edges, with all that pepperoni and cheesy goodness in the middle. So if you’re craving homemade pizza also, grab some French bread and here’s what you need:

*1 loaf of French bread

*pizza sauce

*Colby and Monterrey Jack cheese; shredded

*sliced pepperoni ( or any other desired topping)

Preheat oven to 410°.

Half the bread crosswise

Then cut it in half lengthwise.

Place bread slices cut side up on a baking sheet. Spread pizza sauce on each slice.

Layer cheese on top of the sauce.

Next place the pepperoni on top of the cheese.

Put in the oven and bake about 10 motor until cheese is melted and edges of bread is toasted.

Serve and enjoy!
