Chocolate Chip Cookie Ice Cream Sandwiches

There’s nothing better than cold creamy ice cream on a hot day…..or any day for that matter. These ice cream sandwiches combine baked chocolate chip cookies and vanilla ice cream to make one satisfying dessert. To make it even easier, I used premade cookie dough for the cookies and my favorite brand of vanilla ice cream. You can use your favorite chocolate chip recipe if you’d like.

These are great to keep on hand for the kiddos when they want a little treat, or keep some for yourself for an indulgent snack.

Here’s what you need:

*premade chocolate chip cookie dough or you’re favorite homemade recipe

*vanilla ice cream

Bake the cookies according to the package directions. Do not over bake. It’s ideal to keep the cookies a little on the soft side since they will be eaten while frozen.

Place on a cooling rack to cool completely.

This step is important because warm cookies will cause the ice cream to melt too fast when trying to assemble.

After the cookies have cooled, scoop out about 1/3 cup of ice cream and place on the flat side of one cookie.

Top with another cookie ( the flat side on to ice cream)and gently press down.

Wrap the ice cream sandwiches with plastic wrap and place in a zip top bag.

Freeze for at least an hour. Let set out at room temperature before serving to soften some.

These can be stored up to about a month.

Black Bottom French Vanilla Ice Cream Pie

I don’t know what the weather is like where you are at, but down here in the South, summer is already here. This week has been in the high 90’s with the heat index of triple digits. *whew* So now that the days are getting warmer, there is nothing better than some cold, flavorful ice cream. But why stop there, how about an ice cream pie. This Black Bottom French Vanilla ice cream pie is rich and satisfying with sweet, cool French vanilla ice cream and an Oreo pie crust that has been smothered in luscious chocolate syrup. But that’s not all, it’s then topped with more chocolate syrup and fluffy whip cream.

My mom used to make this for my birthday when I was a kid and to this day I still get a craving for it. She used white chocolate mousse, but it’s harder to find now so I substituted French vanilla. You can choose what ever flavor you wish as well. There is no baking required and this is something that the whole family can make. The hardest part to this, is waiting for the pie to chill before eating.

Here’s what you need:

*1 chocolate pie crust; I used an OREO pie crust

*chocolate syrup

*French vanilla ice cream

*whip cream

Take out the ice cream about 10 to 15 minutes to soften.

Lay out the chocolate pie crust, pour and spread the chocolate syrup on the bottom of the pie crust; just enough to cover it.

Place in the freezer for about an hour or until chocolate syrup has thickened.

Scoop out some of the vanilla ice cream and place into the pie crust.

spread the ice cream until smooth.

Cover and freeze for 2 hours. Cut and serve with chocolate syrup drizzled over the top and top with whipped cream.
