Open Faced Cheesy Pepperoni English Muffins Topped with A Fried Egg and Marinara Sauce


This is another one of my hubby’s creations. It turned out really good, but to be honest, we really didn’t
know what to call this one. It’s not really a pizza…ok maybe a reverse pizza? This is a really simple and quick lunch or dinner.. or even breakfast if you desire. It’s layered with cheese, pepperoni, a fried egg then topped with marinara sauce. This one does require a knife and fork, but it’s worth it when you first cut into the gorgeous egg and the yolk spills all of that tasty goodness onto the muffin. Heaven.

Here’s what you need to make your own:

*English muffins

*shredded cheese; I used a cheddar and Colby Jack blend

*pepperoni

*eggs, one per each half muffin

*2 tsp. canola oil

*salt and pepper to taste

*marinara sauce; jarred or homemade

Preheat oven to 400°

In a small sauce pan, heat up the marinara sauce.

Separate the muffins and place on a baking sheet.

Sprinkle the cheese over the English muffins.

Layer the pepperoni over the cheese.

Place in the oven and bake until the cheese is melted and the muffins are lightly toasted around the edges; about 3 to 5 minutes.

While the English muffins are in the oven heat a non stick pan on medium high heat and add the oil. When the pan is hot, crack the eggs into the pan.

Cook until the whites are set but the yolks are still runny; season with salt and pepper.

Take the English muffins off of the baking sheet and place on serving plates. Carefully place an egg onto each half muffin over the pepperoni.

Top with the marinara sauce.

Air Fryer English Muffin Pepperoni Pizzas

English muffins can be used for so much more than just spreading on some butter or your favorite jam. Don’t get me wrong that is really yummy, but what if you are craving pizza, but you don’t really feel like making any from scratch or breaking out the frozen kind. These can satisfy that craving. English muffin pizzas are great for a snack or a meal. Spread on a little pizza sauce and top it with your favorite pizza toppings and your taste buds will be happy. What’s even better is that these are cooked in the air fryer which means you can have your mini little pizzas even faster than if they were cooked in the oven.

Here’s what you need:

*English Muffins

* Pizza sauce, homemade or jared

*shredded cheese; I used a blend of mozzarella and cheddar

*Pepperoni or any other pizza topping

Preheat the air fryer at 400°

Split apart each muffin and spread some pizza sauce on each half.

Sprinkle on the cheese and top with the pepperoni.

Place inside of the air fryer basket and cook for 2 minutes. Open the basket and make sure that none of the pepperoni have blown off due to the fan. If they have, just carefully….the basket will be hot….place the pepperoni back onto the pizzas. Continue to cook another 1 to 2 minutes or until the cheese is melted and the English muffins are toasted.

*Note* Cooking time might vary depending on the brand and size of the air fryer.

Very carefully remove the pizzas and serve.

English Muffin Cheeseburgers

I love a good cheeseburger and I’m always trying to find a way to make them a little different. These cheeseburgers came about when we had some leftover English muffins. Why not replace the usual hamburger bun with an English muffin? The result was a simple, but tasty burger smothered with melted, gooey American cheese, topped with ketchup, tangy mustard and pickles all nestled between a toasted English muffin. You can’t go wrong with that.

Here’s what you need:

*1 LB ground beef

*1 TBS Worcestershire sauce

*1 1/2 tsp. onion powder, or more to taste

*1 1/2 tsp. garlic powder, or more to taste

*1 tsp. paprika

*1/2 tsp salt

*cracked pepper to taste

*sliced cheese; I used white American cheese

*English muffins

In a large bowl combine ground beef, Worcestershire sauce, onion powder, garlic powder, paprika, salt and pepper.

Form into 4 patties.

As you can tell, my patties are never perfectly round, but I think that’s what gives them a little character.

Heat a cast iron pan to medium high heat. Add the patties to the pan.

Cook for about 5 minutes then turn them over.

Cook for another 3 minutes for medium rare burgers or 5 minutes for medium burgers. If the burgers seem to be getting too done too fast, turn the heat down to medium.

Place the cheese on each patty and cook for another minute or 2 until cheese melts.

Take the patties out of the pan and place on a plate, tint with foil to keep warm.

Toast the English muffins.

Place the hamburger patties on the English muffins and top with your favorite hamburger toppings.

Serve and enjoy!

Ham, Bacon, Egg and Cheese Breakfast Sandwich

Yep, it’s another breakfast sandwich. I do love a good breakfast, even though on weekday mornings I can’t really spend a lot of time in the kitchen. This breakfast sandwich is easy to make. It’s tasty and very satisfying as well with a few nice slices of black forest ham, crispy bacon, cheese and an over easy egg, all nestled in an English muffin. These freeze nicely as well. If you are going to freeze them, I would scramble the egg or wait and cook an egg after you have unthawed the sandwich. If you prefer making them fresh, but are a little pressed for time, pre cooked bacon is great in this as well.

Here’s what you need:

*English muffins

*butter

*sliced ham; I used deli black forest ham

*cheddar cheese; I used shredded because that is what I had on hand, but you can use sliced as well

*bacon, cooked; I used 1 slice per sandwich.

*eggs; one egg per sandwich

*hot sauce

Pre heat oven to 400°

In a non stick pan, cook eggs over easy.

While eggs are cooking, spread butter on the top and bottom of each english muffin and place on a baking sheet. I lined mine with foil for easy clean up.

Place desired amount of ham slices on the bottom side of the muffin. I used about 3 slices.

Place a slice of bacon on top of the ham.

Add the cheese over the bacon.

Place into the oven for about 5 minutes or until cheese is melted the muffins are warm.

Gently place the egg on top of the cheese and add a few splashes of hot sauce.

As you can see one of my eggs did not quite make it without bursting before I finished. But it was all good just the same.

Place the tops of the muffins over the eggs and serve.
