Cheesy Grits with Bacon and a Fried Egg
This is for one serving.
*grits ( I used the quick cooking kind)
*salt, to taste
*butter, to taste
*white pepper , to taste ( I like using the white pepper rather than black pepper, but use what you prefer)
*1/3 C shredded cheese ( I used a Colby Jack Cheddar blend)
*2 strips of bacon
*2 Tbs canola oil
Cook bacon then crumble, set aside.
Prepare grits according to package directions.
While grits cook, heat a small skillet to medium high heat; add oil. When the oil is hot add the egg, salt and pepper to taste.
When grits are done cooking, add salt and white pepper to taste. Stir in butter and cheese. Transfer grits to a bowl. Add bacon on top of the grits. Top with the fried egg.
